The purine nucleoside phosphorylase N07 is of bacterial origin and thermostable up to 80°C. Purine nucleoside phosphorylases catalyze the reversible phosphorolytic breakdown of the N-glycosidic bond of (deoxy)ribonucleosides, with the formation of the corresponding free purine base and pentose-1-phosphate.
